This season I made cookies for the fantastic Food Blogger Cookie Swap , an unbelievable nationwide cookie exchange hosted by Love & Olive Oil Over 22,000 cookies were sent all over the world as part of the swap! Wow, that’s a lot of offering. It makes me happy to know that there are people out there who’ve the same like of baking that I do. You’re amazing!
One of the best gifts I’ve ever gotten was a KitchenAid mixing machine. I can make almost anything with it. Given that was the perfect gift for me. It produced me recognize that person totally got me. If you’re generally just terrible at giving gifts, it’s always better to just pick out things that you have memories of with that person. 3 mugs all-purpose flour
1 teaspoon cooking soda
1/2 teaspoon salt
1/2 cup granulated sugar
1 1/2 teaspoons vanilla extract
48 Rolos, unwrapped
Makes about 48 cookies
Preheat oven to 325 levels F. Mix dried out ingredients and reserve.
On medium speed, in large bowl, blend sugars; add butter, mix till grainy regularity. Add eggs, dairy, peanut butter and vanilla extract; and defeat until fluffy. Gradually add flour mixture and defeat on sluggish until well combined. Place dough in refrigerator for 1 hour, or in the freezer for 30 minutes. The colder the dough, the easier it’ll be to work with. Consider one heaping tablespoon of the dough and flatten out in the palm of your hand. Place one unwrapped Rolo in the centre and work dough around so the Rolo is completely hidden. Roll dough into a ball with your hands, then drop and move in sugars. Place 2 inches aside on ungreased cookie sheet. Bake until the edges of the cookies are gently browned, about 15 to 18 minutes. Underbaking the cookies a little results in a chewier cookies, cooking longer will make them more sharp.
